I love liver properly cooked and served with caramelized onions. My mother used to make this all the time. Sadly, I can rarely find anyone else who shares this passion. Today, liver in the U.S. is difficult to find at the supermarket and even rarer to find on a restaurant menu. Upon traveling to Turkey, however, I was thrilled to discover that it is regularly enjoyed at family meals and practically any restaurant. I order it every time I visit.
